My Vegan Menu Celebrating DC VegWeek 2011

April 18-24 is VegWeek here in DC and I think it is a fantastic idea. It's a program put together by Compassion Over Killing, and as of now, takes place in Maryland, DC, Virginia, and California. This is a first-ever for DC and I truly hope that other states will join in. Compassion Over Killing states VegWeek is "a week-long pledge to choose vegetarian foods as a simple yet effective way to help protect the planet, our health, and animals." In our home, vegetarian cooking is our norm, so we decided to pledge 7 days of vegan meals. Below is the delicious menu that we put together. Monday: Lemon Orzo with Sautéed Mushrooms
Tuesday: BBQ Tofu with Homemade Sweet Potato Fries
Wednesday: Spring Noodle Stir-Fry with Asparagus and Walnuts
Thursday: Chili 'Cheese' Nachos with a Mixed Greens Salad
Friday: The Best (and Easy) Marinara Sauce Tossed with Pasta and served with Salad and Whole Wheat Garlic Bread
Saturday: Gardein Chicken Piccata with Sautéed Greens
Sunday: Greens & Black Bean Quesadilla
